  1. 1 whole chicken.
  2. 2 lemons, quartered.
  3. 6 raw potatoes, or more.
  4. 16 stalks of celery chopped into one inch pieces.
  5. 4 tomatoes cut into about 1/2 inch pieces.
  6. 1 cup peas, either freeze dried, fresh or frozen.
  7. 16 carrots chopped into one inch pieces.
  8. 1 onion chopped.
  9. 1/2 cup lemon juice.
  10. 3 tablespoons oil, olive oil is best.
  11. 1 twelve oz can of V8 juice.
  12. 1/2 cup balsamic vinegar.

  • Spray the inside of a 10 inch cast iron Dutch oven with cooking spray.
  • Clean your fireplace and remove the grate, you will need a level place to work.
  • Build a fire and allow the fire to burn down to hot coals.
  • Place some of the vegetables and liquid ingredients in the Dutch oven.
  • Clean the chicken, don't forget to clean out the inside cavity.
  • Get oil all over the outside of the chicken.
  • Push the lemons into the cavity.
  • Place the chicken on the vegetables and jam all the other ingredients in any way they will fit.
  • Wash your hands after handling the chicken.
  • When the fire dies down to hot coals consolidate the coals into a 9 inch circle.
  • Place the Dutch oven directly onto the hot coals, put the lid on.
  • Light a second fire on top of the Dutch oven and keep it going for 2 hours and 30 minutes.
  • Check it. the meat should fall off the bones, IMPORTANT, it is better to overcook it rather than undercook it. Cut the chicken and look close to the bone, if any of the meat looks raw keep roasting.
